New Year Greek Recipe: Chicken Pie

As a Kinezaki I have to state that eating and food are important. And most of the times I like to combine memories with food and taste. It sometimes makes me feel like home when I noticed that for Greek, eating is also a culture and important part of life, as well as they use variety kinds of ingredients, herbs, meat and vegetables. 

For new year recipe, here introduce the traditional greek chicken pie.

Prepare:

  • stretchable dough; (Fill the glass as  with warm water and fill with oil, put salt,  then mix gently with the pouring flour until a soft dough).
  • boiled chicken meat (not just breast, whole chicken with the bones);
  • ready rice cooked with the chicken’s stock
  • a ready oven dish with olive oil on the surface

1. The first and hardest part is making multi-layers pie. And what we need here is PATIENCE. A long stick  could do the work. Stretch them as thin as possible but don’t break them.

In total we can prepare 5 to 6 layers. A lot of powder is needed to separate different layers, they are quite easy to stick with each other.3_Fotor_Collage

2. Take the ready layers and put it into the pan, between the layers, put olive oil.

3. Put chicken and the cooked rice as shown. Make it in a pretty shape.

4. Cover the chicken with the edge of the dough, and put it in oven for about 20 min, 200 degrees.

5. Ready, along with other dishes.

During the new year celebration, Greeks also make one special cake called “Vasilopita”. One coin was put in the big cake and people share the cake, whoever gets the coin is expected to have good luck in the following year. We do the same in China in dumplings though.
